It is used in bottling operations for the purpose of drastically reducing the oxygen contained in the headspace of the bottle, between wine and cork.
The system dispenses droplets of liquid nitrogen into the headspace by gravity, when the bottle is filled and before capping. Nitrogen in contact with the wine changes to a gaseous state with an increase in volume such that air is removed, thus preventing the oxygen content from becoming trapped in the bottle and subsequently being absorbed by the wine.
